Anchovies in Vinegar

Ingredients:

  • 1 kg anchovies (large)
  • White wine vinegar
  • Salt
  • Extra virgin olive oil
  • 4 cloves of garlic
  • A bunch of parsley

Preparation:

  1. Remove the heads and guts of the anchovies, then remove the backbone and soak them in water.

  2. Once well washed and blood-free (they should be white), place them in a container covered with vinegar and water in a ratio of 80% vinegar to 20% water.

  3. Add 75 g of coarse salt and let them marinate in the refrigerator overnight (8 hours is sufficient).

  4. Wash them and taste for salt; if they are too salty, wash them again.

  5. Drain them well and arrange a batch of anchovy fillets in a tray, add chopped garlic, extra virgin olive oil, and chopped parsley. Arrange successive batches with the same dressing until finished. Cool and serve.
